Sweep out ash after each burn, get the firebox and chimney inspected periodically, reseal the stone or brick when the surface starts looking thirsty, and cover the opening or use a chimney cap to keep rain and snow out of the firebox. Done right at the build stage, you shouldn't be dealing with cracked mortar joints or spalled stone every spring.
